Watermelon and Feta Cheese Salad
1 – 1/2 cups watermelon (bite sized chunks)
1/4 cup Greek feta cheese crumbled
1/4 cup fresh mint leaves (cut into strips)
1/2 spinach leaves
1/2 tablespoon freshly squeezed lemon juice
1/8 cup extra virgin olive oil (or lemon oil)
dash of salt
Cut watermelon into bite sized chunks. Place the spinach on a plate. Put watermelon on top, sprinkle with the feta cheese and mint.
To make the dressing: Put salt and lemon juice in a jar and shake to mix. Add the oil and shake again. Drizzle over the salad. Enjoy! It is YummE!!
