Good morning and Happy Monday!  After a 15 mile run yesterday morning, I was ready for something different for breakfast.  Please check out the recipe for blueberry oat muffins.  They are healthy, moist and delicious.  Let me know what you think, as I would love to hear from you.

Breakfast Blueberry Oat Muffins


1 cup old fashioned oats

1 1/2 cups whole wheat pastry flour

1/3 cup unsweetened coconut

1/4 cup chopped pecans

1 tsp baking powder

1 tsp soda

1 cup unsweetened vanilla almond milk

1/2 cup honey

1 tsp vanilla

3/4 cup canola oil

1/4 cup sucanat

2 eggs beaten

Heaping cup of fresh blueberries

Line your muffin tins (about 16).  Preheat the oven to 400 degrees.  In a medium sized bowl, combine, the oats, floour, baking soda and baking powder.  Add the nuts and coconut and stir.  In a large bowl, combine the canola oil, almond milk, honey, vanilla and eggs.  After combined, add to the dry ingredients and stir just until moistened.  Gently fold in the blueberries.   Spoon into your muffin tins and bake for 18 to 20 minutes or until a toothpick comes out clean.  Also, these freeze well.    Enjoy and let me know what you think!
