Granola Maple Bites

Good morning – Hope you all are doing well and having a great week.  Today got off to an early start as I taught BodyPump at 5:45.  Yikes.   I have a healthy cookie recipe for you today.  The photo admittedly is really kinda pathetic, but I am posting anyway just so you can sorta see what they look like.  A camera is a must, as I am just using my iPhone.  Maybe I should tray Instagram photos, but I digress…  Let me know what you think, if you try the recipe.  These go together really quickly and are quite tasty.  Thanks for looking and please don’t hesitate to contact me, as I love hearing from you.  Have a healthy day!  Here goes:


1 cup granola (your choice – or you can make your own – I did)

1/2 cup unsweetened coconut

1/2 cup Sucanat

1/4 cup maple syrup

2 egg whites

1/2 cup toasted almonds

1/2 cup almond butter (you could use peanut butter or cashew butter here as well)

1 tsp cinnamon

1/2 teaspoon vanilla (I make my own – if interested, I will share how)

Preheat your oven to 350 degrees.  Put all the ingredients in a large bowl and mix well until all combined.  Line a cookie sheet with parchment paper.  Drop by spoonful onto the prepared cookie sheet.  You also use a melon scooper for the dough.  Bake for 8 to 10 minutes or until the edges are a little brown.  These will be chewy.  Enjoy!  And let me know what you think.
