Almond Butter Banana Muffins

Hello Friends – I have got a ymmy recipe for you today.  After our long run over the weekend – 20 miles this time!!  Yup, we are definitely in the midst of marathon training and all is going well.  So far so good.  Fingers crossed it will continue 🙂  In any event, I had been working on an almond butter muffin recipe and this one received rave reviews from the.  Hope you like it.  Let me know what you think, as I would love to hear from you.  Here ya go – Oh, yeah, I threw in some dark chocolate chips at the last minute.  I just couldn’t help myself.  These are good with or without.

Almond Butter BananaMuffins

Almond Butter Banana Muffins

1 cup whole wheat pastry flour

3/4 cup old fashioned oats

1/3 cup Sucanat

1 tablespoon baking powder

1 cup almond milk

1/2 cup massed banana

1 egg

3 tablespoons unsweetened applesauce

1 teaspoon vanilla

1/2 cup almond butter


1/4 cup old fashioned oats

1/4 cup whole wheat pastry flour

2 tablespoons organic butter

2 tablespoons Sucanat

Preheat your oven to 375 degrees.  In a large bowl, combine the flour, oats, Sucanat and baking powder.  In a separate bowl, whisk the almond milk, almond butter, banana, egg, applesauce and vanilla.  Add the wet ingredients to the dry ingredients.  Mix just until moistened.  Pour in muffin cups.  For the topping, combine all ingredients in a food processor and pulse until crumbly.  Sprinkle on top of each muffin.  Bake for about 18 minutes.   Enjoy and let me know what you think.  Have a healthy day!
